simple, late summer salad

Well here’s something that’s good for you! I mean, goat cheese is good for you, right? No, really. I don’t know. I just know it’s my most favorite cheese ever. Therefore, it’s quite good for me.
This is a great side salad (or would be excellent with some grilled chicken served over it). The goat cheese adds creaminess and tang, the balsamic vinaigrette adds a delightful layer of sweetness. Oh, it’s a wonderful combination. Simple and easy.
Cherry Tomato and Goat Cheese Salad
Makes 2 servings
4 cups arugula-spinach mix
1 cup cherry tomatoes, sliced in half lengthwise
2 tablespoons crumbled goat cheese (I used Belle Chevre)
1/8 cup extra-virgin olive oil
1/8 cup balsamic vinegar
1 teaspoon course ground mustard
Freshly ground black pepper and salt
Combine spinach, tomatoes, and goat cheese in large bowl. In a small bowl or measuring cup, whisk together oil, vinegar, mustard, pepper, and salt. Drizzle over salad mixture; toss until evenly coated. Serve immediately.
